The Perfect Autumn Salad
I love fall food. When recipes get warmer, full of spice and aromatic enough to fill your whole house. This Autumn salad is the perfect addition to the heartier dinners of the season.
- The Perfect Autumn Salad -
2 heads of Lacinato Kale
1.5 Cup of Cooked Lentils
2-3 Cooked and peeled Beets, sliced
1-2 Green Apples, sliced
1/2 Red onion, thinly sliced
Handful of toasted Almonds, seeds, or walnuts for crunch, roughly chopped
Optional: Roasted Delicata Squash, Quinoa, crumbled feta, Pomegranate seeds

A Note: We quickly assembled this salad with pre-cooked beets and lentils from Trader Joe's, mixing all together with bagged pre-chopped kale
- The Perfect Autumn Salad Dressing -
2 pitted Dates, soaked in warm water
3 TB water
3 TB apple cider vinegar
2 tsp grainy mustard
1/2 tsp cinnamon
1/4 tsp salt
Crack of black pepper
1/3 Cup of light Olive Oil

Measure all ingredients into a blender and blend until smooth. Season to taste.
