Spiced Persimmon Cookie

If you know anything about Sarah, you must know that she is a baker at heart. Always trying new recipes and delicious takes on the classics. Recently, the transition to a gluten-free life has inspired even more exploration. Here is a spiced persimmon cookie we recommend enjoying alongside your morning cup of coffee or afternoon tea.

Soft, Spiced, Persimmon Cookies
1/2 cup soft unsalted butter
1/2 cup Persimmon: Pulp or finely diced
2 eggs
3/4 cup Coconut Sugar
1 tsp vanilla extract
1 3/4 cups Bobs 1:1 Gluten Free Flour
1 1/2 tsp cinnamon
1/4 tsp fresh ground nutmeg
1/4 tsp ground cloves
1 tsp salt
1/2 tsp baking soda
1/2 cup chopped walnuts

Preheat the oven to 350
Cream together the butter and coconut sugar
Add in the persimmon and eggs. Mix well. Add the vanilla
In a separate bowl, combine the dry ingredients. 
in parts, mix all together. When well mixed, add in the walnuts, if using. 
Drop dough rounds onto cookie sheet. Bake for 10-12 minutes
Allow to cool before enjoying.
